In 2019, the most common type of soy sauce distributed in Japan was of the thick taste (koikuchi) variety, accounting for an ** percent share of the domestic shipment volume. Japanese-style soy sauce varieties are categorized according to the ratio of wheat to soybeans as well as additional ingredients used in the production process. Koikuchi soy sauce is considered the regular-type soy sauce with an equal ratio of soybeans to wheat.
