In the brewery year 2023, the largest share of special-designated sake produced in Japan was graded "junmai-shu", with over * kiloliters. Special-designated sake refers to premium sake, which is graded according to the ingredients and the polishing ratio of rice in the manufacturing process. For "junmai-shu," up to 70 percent of a rice grain is used in the fermenting process. Other ingredients include distilled alcohol and rice treated with "koji" mold.
