In the brewery year 2023, the largest share of special-designated sake produced in Japan was graded "junmai ginjo-shu," with more than * kiloliters. Special-designated sake refers to premium sake, which is graded according to the ingredients and the polishing rate of rice in the manufacturing process. For junmai ginko-shu, up to 60 percent of a rice grain is used in the fermenting process. Other ingredients are rice treated with "koji" mold.
