The records of receipts include records such as the “receipt date,” “recipient,” “item name,” and “quantity” of incoming raw materials or purchased goods and ingredients. The records of shipments include records such as the “shipment date,” “destination,” “item name,” and “quantity” of products.

The methods of preservation include entry into “ledgers” or other accounting books, electronic data on computers, as well as documents provided by suppliers or recipients such as “delivery slips” and “invoices,” and documents issued by transportation companies such as “shipping notes.”

Citation formats

According to a survey conducted among food businesses in Japan in 2022, approximately ** percent of responding businesses stated that they saved all records of receipts and shipments for incoming raw material, purchased goods and ingredients, as well as shipments of their products. Around ** percent of responding businesses answered that no records of receipts and shipments are being saved. The process of tracing receipts and shipments was most adopted among food manufacturers and wholesalers.
