Baijiu, also known as shaojiu or archaically as sorghum wine, is a Chinese alcoholic beverage made from grain. Báijiǔ literally means "white (clear) alcohol" or liquor, and is a strong distilled spirit, here it refers to 65 percent alcohol by volume.
It was estimated that around * liters of baijiu were sold in China in 2022, decreasing from **** billion liters in the previous year. There has been a downward trend in baijiu sales since 2016, resulting from a decrease in production and increases in prices.
