Food, like other aspects of life in India, developed over centuries, imbibing influences of its zeitgeist. Today, it varies from traditional, regional foods concocted with roasted, powdered spices, to a bucket of chicken wings from KFC, and everything in between. Food that once indicated caste, class, and socio-economic status, was now accessible, in theory to everyone. With over seven million people employed within food and drink services, the food service industry was expected to be valued at about five billion Indian rupees by 2025.
