Sales in supermarkets, food service, and specialized organic food stores. The following are excluded: grocery stores for foreign food products, street vendors, purely online retailers, and specialized stores such as bakeries and butcheries.
Supplementary notes
The source defines sustainable food as food produced according to higher standards than those prescribed by law with respect to the environment, animal welfare and/or social questions.
Not all expenditure in all supermarkets was measured. The 2013 figure covers approximately 68 percent of the market, the figures for 2014, 2015, 2016, and 2017 cover approximately 70 percent of the total food market. Starting in 2018, the source used a research method, which partly explains the sharp increase fom that year onwards.
