This statistic shows the global consumption of vegetable oils from 2017/18 to 2021/2022, by type of oil. In January 2021, the consumption of sunflower seed oil reached 20.1 million metric tons, while the consumption of the same oil in 2017/2018 was about 17.44 million metric tons.

Vegetable Oils

Vegetable oils are oils or fats extracted from a plant. Their texture can be liquid, oily, or fatty. Most vegetable oils can serve two functions: they can be used either as cooking oil or in the production of gasoline or diesel fuel. The most common oils are palm oil, soybean oil, canola oil, and sunflower oil. Palm oil is extracted from the palm nut, which mainly grows in the tropical climates of Africa, South America, and Southeast Asia. It is estimated that about 90 percent of palm oil is used for food consumption, while industrial consumption for cosmetic products or fuels accounts for only 10 percent.

In terms of food consumption, vegetable oils are seen as a healthier alternative since they contain more unsaturated fatty acids than animal fats. One of the most widely used oils for cooking is canola oil, also known as rapeseed oil. It is obtained by extracting rapeseed, which is then lightly roasted and crushed. Canola oil is recognized for several benefits; indeed, it contains a high amount of omega-3 (alpha-linolenic acid) and omega-6 (linoleic acid), unsaturated fatty acids, and offers the lowest content of saturated fatty acids. In July 2021, global consumption of canola oil reached about 28.94 million metric tons, compared to 11.2 million metric tons in 1995/1996.
