Maple syrup is most commonly associated with Canada, the product’s largest producer. The national flag of Canada also features a large red maple leaf.

It is believed that the production of maple syrup dates back to the indigenous people of North America who discovered a way of processing maple tree sap into syrup and sugar. Maple sap is usually gathered in springtime when the weather conditions make it easy to collect the sap by boring holes into the trunk of the maple tree. The sap is then boiled down into maple syrup. Maple syrup is commonly used as a sweetener, a topping for pancakes and waffles or as an ingredient in baking.

The volume of maple syrup produced in Canada fluctuates each year, but, on the whole, has more than doubled from just over five million gallons in 2008 to close to 20 million gallons in 2025. The vast majority of Canada’s maple syrup is produced in the eastern province of Quebec. As the leading maple syrup producer in Canada, Quebec has by far the largest number of maple farms and, as a result, the most maple taps.

Exporting maple products is economically and culturally important for Canada and the value of maple product exports has risen steadily in recent years. In 2024, exports of maple products amounted to more than 524 million Canadian dollars. The largest share of Canada’s maple product exports are destined for the United States. Other leading destinations include Australia, Germany and the United Kingdom.
